Kala Namak coarse – specially for those who cook vegan dishes. Also known as Indian black salt. When ground, it takes on a brownish-pink colour and has a slight sulphurous taste, which gives dishes a smoky, spicy and egg-like flavour. Rich in minerals, particularly iron. Used in Indian cuisine. Kala Namak is used sparingly in the preparation of raita sauces, yoghurt dishes, salads and even fruit salads. It is also a welcome addition as a garnishing salt for fried noodles and rice dishes. It is not recommended for use in hot dishes, as the sulphurous flavour tends to dominate, though ardent salt enthusiasts may disagree!
